EXTRA ZUCCHINI??

Try this:

Grate your zucchini. If it’s a big one divide portions in 1/2.

Sautéed in butter with a little bit of salt.

When it’s cooked, add one egg and scramble.

(Note: I find it easier to cook individual servings)

Plate up and add soy sauce.

Tastes like Egg Foo Young without the gravy!
