OK. I didn’t know. My friend’s husband (grew up on a farm) cooks beet greens all the time. In fact, I’ve been giving him the beets from the farm box as honestly I hate cooking beets, let alone the greens.
The beets stain everything or in the oven takes a long time to bake. Am I doing something wrong with cooking them? Probably…
This time I decided to eat the greens. I read the beet greens are seldom washed. This morning I proved to be true. After washing the greens (several times) and chopping up the stems I sautéed them in olive oil and threw in one frozen garlic cube from Trader joes. Cooked them down for about 10 minutes.
I fried an egg (in olive oil) and ate that on top. YUM. Who Knew? Everybody but me!
1 bunch of beet greens washed
Chop stems and leaves
Add to skillet with olive oil ( I probably used apx a tablespoon of oil)
1 frozen garlic cube from Trader Joes
Let it cook down for apx 10 minutes, stirring and keeping an eye out.
Bingo!
