Pie, Pie, Me Oh My!

Basic Pastry Dough ( page 639 in cookbook) I bought frozen shells from Trader Joes

1 cup sugar

1/2 teaspoon salt

1 1/2 teaspoon cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon cloves (Only had whole cloves. Ground them in the coffee grinder)

1 1/2 cups cooked pumpkin or canned (mashed or pureed) I roasted the pumpkin & butternut squash I bought from farm box…thinking it was a pie. HA HA and peeled & pureed in my Ninja)

1 1/2 cups evaporated milk (Happened to have a can in the pantry in case couldn’t get milk with covid)

1/2 cup milk

2 eggs beaten

Preheat oven to 425 degrees F. Line a pie pan with the pantry dough. Combine the remaining ingredients in a large bowl & beat until smooth. Pour into the lined pie pan. Bake 10 minutes then lower heat to 300 degrees F & bake for about 45 minutes until filling is firm.

I ended up with 4 cups of cooked pumpkin and butternut squash, so I made 2 pies. I left the pies in a longer than 45 minutes. Maybe it’s my old ass stove is a liar like *Thug cooking tells us and to always check the temp. Fanny Farmer also mentioned that to always use the bottom rack of the oven as it’s hotter and if possible use a real pie, not the aluminum kind or glass. The pie will cook more evenly.

I poked both pies in the middle to see that they were done. When I figure out a way to hide the holes I’ll post a pic and by then will let you know if they taste ok. BTW, added a little more cinnamon also.

BUT….a THUG is black? Call me a cracker, but I always thought a THUG could be any race. A Thug is a thug, robs, steals, dislikes law and order, an archaist of sorts, an individual that doesn’t follow popular culture, merchandising, sales, money. A Thug. Think of the 40’s. Isn’t that where a Thug originated?
