Meatless Stew & Mushrooms

We are having our first rain of the season here. It’s a big deal as we don’t get much rain in the summer months, if any. Welcome Autumn!

It’s a great day to make a big pot of something scrumptious to eat! Something easy to cook, right? It’s Sunday and WHO wants to labor over a stove?

I was glancing at an old copy of Forks over Knives magazine titled, “How to Eat Plant based” from 2020. (Yup, I save some magazines…) I found a recipe for Meatless stew. Do you know how long I’ve craved beef stew? (and why did I not EVER notice this recipe??) I haven’t ate beef in years, so am always on a hunt for recipes without beef. Meatless stew has tomatoes, potatoes, mushrooms and seasoning. It cooks in about an hour. I don’t have all the ingredients to make it at this time, damn it. I have mushrooms, but want to make fried mushrooms in the air fryer!

I found this recipe for fried mushrooms this morning .When was the last time you ordered fried mushrooms in a bar? I haven’t seen that on the Happy Hour’s menu in years. WHY???

We leave the air fryer/oven out, but just might get the old air fryer out that causes the lights to blink. Haven’t used that one in a while! ‘Tis the season.
