Left Over Beans

What do you do with leftover beans? Added, I overcooked them. URK.

All the reviews sang the top praises. I am so disappointed. I used Vaquero beans from Rancho Gordo. They are a beautiful black and white bean. They are cousins to a bean called  Anasazi and those beans are sometimes called Appaloosa beans

I just read Anasazi is the Navajo’s word for “the ancient ones.” How cool is that? 

I soaked them, then boiled for ape 15 min, then added to crockpot with sautéed celery, onions and a yellow pepper. I added a small container of homemade vegetable broth (throw whatever is around to make).

Bland and bland. Never smelled them cooking. You can always tell when your beans are damn near ready to eat after slow cooking in the crockpot as you can smell them. I never smelled them. Isn’t that odd?

I don’t want to throw them out and decided to make soup or a dip. I like the idea of a dip better. Pinterest has some pretty good recipes vs trolling google. Always the same ol’ pop up- tacos, burritos, enchiladas, etc. Another good idea is to stuff peppers- hell any kind of pepper with beans, spices and rice, why not?

BUT I’m sticking to the bean dip. I don’t have the recipe in front of me, but this is how I’m gonna do it:

-2 cups cooked beans drained

-Cumin, chili powder, garlic powder or finely chopped garlic, paprika, oregano, little bit of salt and pepper. – Eyeball it, but don’t overdo it. Start with a teaspoon of each of the spices and taste. Trust your instincts.

If the dip still needs an uplift, mix in a couple of tablespoons of salsa.

-Green peppers, maybe one of those little cans of chili peppers that used to be 99 cents or chop up at least one (maybe two) jalapeño peppers

-And lots of shredded cheese (I’m going to use shredded cheddar with a touch of feta)

-Park that pan in an oven. I use a Cuisinart air fryer/toaster oven that I have to watch or it burns everything to hell and back btw….put it on 350 degrees and watch it on and off. It’s amazing 5 minutes might even be tooo long. Just keep an eye on it.

Add cilantro & black olives for a topping.

Get some local corn chips and a good drink. It’s HAPPY HOUR!!!!
