Happy St. Paddy’s Day 2021

Are you going out to celebrate??? Is it safe? Is it safe outdoors drinking a brew or Irish coffee? Will the crowd maintain?? (6 ft away, wearing masks…)

I’m thinking…maybe. AND maybe I’ll just head down to Jack London Square in Oakland to make up for lost time from last year when we closed it down today March 16th one year ago.

We were watching the 11am news last year and they let it leak out the governor was going to announce shut down in a couple of hours for the bay area. We immediately left the house and picked up a pizza. Then decided to stop by the liquor store. Picked up East Brothers pilsner, one of my favorites and grabbed a bag of brown lentils as this liquor store was a mini Indian market as well.

One year!!!! One year of lying low, not seeing any of our buddies or family far away. One year of no live music, baseball, happenings, having lunch & dinner out, & happy hours!

One year of no lysol or wipes and hand sanitizer being hard to find, attempting to build up a pantry as had stopped doing that years ago. I like to shop like a European. Once every few days or so…hate having a ton of stuff then I have to do nventory, etc. BUT after months and months that’s what is here now, so have started using the canned goods.

Tuna is first to be used. I love making it with dried tomatoes in oil, a lot of mayo and a bit of celery. YUM. Next on the list are dried beans. I belong to the Rancho Gordo bean club, thus I’ve got a lot of cooking to do! Been dreaming of red beans and rice, so that will be the first dish after St. Paddy’s Day.

Speaking of St. Paddy’s just found this recipe: Vegan Irish Stew: https://itdoesnttastelikechicken.com/wprm_print/12135

I’ve got everything, but parsnips. Don’t think they would really be missed….but nice IF I had them.

Happy St. Paddy’s Day everyone!

May the winds be behind you!

Sláinte!
