What was I thinking?

Decided to make cornbread today using a box mix. It called for oil. I decided to use canola oil. It seemed kind of off, but NOT that much. WHAT A MISTAKE.

The cornbread tasted like old ass rancid oil, who knew? Then I started thinking the oil was originally from a huge bottle from Costco during Covid times when one felt lucky to get anything! It had been in the garage forever. The garage isn’t air tight meaning in the winter it’s cold as hell and I’m paying PG&E to heat up the neighborhood. Luckily, in the summer we generally don’t get extreme heat, so it’s more like a wine cellar.

However, that oil has been in the kitchen for at least a year or more. (in a clear bottle) I seldom even use it unless frying something like tortillas as they always say something about the temperature when using olive oil.

What was I thinking? I thought it smelled a bit old, but figured it wasn’t THAT bad. I just hate throwing anything out anymore if it’s even partially usable. Grocery prices are ridiculously over the top! And what happened to egg prices? We were promised that eggs would be less expensive by now…
